In the big video podcast today, we're learning how to make "rajitas de chile california," the delicious cheesy roasted pepper slices that are a perfect as a comforting side dish, or as a taco in a warm corn tortilla. Try to following along with the recipe even if you can't understand everything you hear, and listen especially for the target word, which means "to fire roast."

Wow, I never had Jalapeños before. Did you add tabasco sauce?
@santiago_argentina- no tobasco sauce was added- pretty much just followed the recipe Leo gave (more or less- used different cheeses and had to improvise a little on the amounts) but I did add fish sauce (I use it in almost every cooked food I make- Se lo hace mas sabroso.

jp- yeah, it did have some real kick to it! Made for a fantastic spread for toasted bagels, though. Mmmmm.... my mouth is watering just thinking about it. : )
jb71, it should be good with Jalapeños too for those who really like spicy food. About the fish sauce... no comments... :P I guess everyone has it's own. As JP said I love tajin with almost everything!

Me gustan mucho las rajitas con queso. Tengo una pregunta. ¿No tendrían más sabor los chiles si no los lavaras en agua? Estoy tratando de comer más saludable. Entonces, ¿Por que necesitas agregar crema cuando los chiles ya tienen queso?

Hay muchas variaciones, de rajitas con queso. A mi en lo personal me gustan con crema, pero claro que las puedes hacer sin crema también.
Les puedes agregar calabacita en cuadritos y elote, asi tendrá mas verduras y por lo tanto serán mas saludables y también son muy ricas así.
Si no lavas los chiles en agua, éstos será mas picosos y seguro que si tendrá un poco mas de sabor. Mi mamá y mi abuela los lavan en agua, por eso es que yo lo hice así. Además, es mas facil pelarlos y limpiarlos con el agua. Pero es al gusto del cocinero, cada quien le da su toque personal.

Gracias por su respuesta. Usted tiene razón que todos tiene sus propios gustos. Es interesante cómo las tradiciones se pasan de la generación a la generación.
Aprendí cómo a tatemar una pimienta cuando trabajé en un restaurante. Dijeron a mí que es mejor guardar la pimienta sin lavarla para guardar el sabor quemado.
Voy a intentar su método con calabaza y maíz. ¡Buena sugerencia!
