La verdad es que yo tampoco entendí lo que dijo Leo.  Tuve que preguntar a mi novia.  Leo y Lile hababan de todos las cosas saludables que tienen los frijoles. Creo que Leo dijo “vitamina, pedos” Mira a Word Reference por la definición de pedos

I think because you started the sentence with "no sabía que"...the subjunctive is required.  You're not saying something "was easier" with certainty.  So yeah, I think you have it right with fueran.

In the beginning, Leo tells Lili that yeah, and they're really nutritious.  So Lili says yeah, they have iron and potassium....and Leo says..."and vitamins...vitamins...pedos"

Pedo can mean a fart. (tirar pedos, echar pedos)  And here with re-fried beans...

You can also use pedo with good friends like you use ¿qué onda?  It's the same thing...¿qué pedo? which is really just what's up?

Thank you.  You make an interesting point with the no sabía que and the subjective.  I was not expressing doubt, I was saying that I did not know something so I think that the indicative not the subjective is called for.  May be I should have said “No sabía que frijoles refritos fueron tan fácil cocinar”  But this is just my opinion and you are probably correct

If the indicative should be used would it be correct to say

“Frijoles refritos eran tan fácil cocinar” since being easy to cook is an continues action?  This does not sound right to me.

You know how you say vitamin B6, B12, etc? I think the joke here is that the imaginary Vitamina P2 is pronounced Pe dos or pedos, which means fart.

I was thinking about your first question and I also had my doubts, so I looked in the Bible (i.e. Butt and Benjamin) and here's what they say:

16.7 ...the subjunctive is sometimes optional after verbs of knowing or believing, depending on the degree of uncertainty involved...  Negated sentences of demonstrable fact, eg, yo no sabía que la puerta estaba abierta 'I didn't know the door was open' (it was) are more likely to take the indicative.

So:  Yo no sabía que eran tan fácil cocinar frijoles refritos 'I didn't know it was so easy to cook refried beans' (it was easy)

As for eran (imperfecto) vs fueron (pretérito), I would go with eran because it sounds more like a state, rather than a discrete event.  The speaker really means 'It's easy to cook refried beans and I didn't know that.'

One correction to what I said above, though:  No sabía que era tan fácil cocinar frijoles refritos, not eran because the subject "cocinar" is singular.

I wasn't sure why Leo had the pause, but now thanks to you I get it.

Vitamin p2 is actually a specific form of vitamin P, I never knew that.

Leo was "albureando"  When you "alburear" you are playing with words.  Usually you can get "dos sentidos" with the word or words that are being used, but the manner in which you connect the words makes all the difference.  So someone who is skilled at this, can really put something past someone who isn't paying attention, and if people are present that understand, they'll get it and try to keep from laughing. 

The Mexicans that I use to work with would do this to me all the time, and then after I saw them laughing, I would ask them to explain, so I learned how to "alburear" too!

So yeah, what Leo said from a vitamin standpoint made perfect sense in the context that they were talking about vitamins and nutritional value, but at the same time the word pedo and of course re-fried beans...jajajaj.

I told a friend at work, who is Cuban American, the joke about beans having vitamin P2 and he did not get it.  Being Cuban he pronounces pedos as peos.  I had to show him on WordReference .com that pedos had a “d”.

We also say : ¿Qué onda? and ¿Qué pex? in the second part "pex" is to avoid the word "pedo" this is when we say it in front of older people, so if my mom or dad are in the room I do not go and ask my friends "he what fart?" hahaha I say "hey que pex". This is more subtle.

Es divertido.  Para me es difícil recordar nueva palabras de vocabulario.  Pero no podría olvidar la palabra pedo si tarara.
