I don't know if it will be actually spanish or latin american, but I have a delicious beans recipe that I made up. I'll transcribe and post. Meanwhile...anyone with any recipes or dishes they'd like to trade?

Ok..aqui es uno de mi favoritos. Este es facil y delicioso. Y perdon, pero voy a escribir en Inglés para la receta.
Russ’ Red & Black Beans
2-3 tablespoons olive oil
1 oz dry Chorizo, chopped
1 large onion, chopped
1-6 Serrano peppers, minced
1-2 plum tomatoes, chopped
1 clove garlic, minced
1+ chipotle pepper in adobo
1 tbs cumin, toasted & ground
1 tbs Doña Maria Adobo paste
1 tbs Better than Broth, concentrated Chicken broth …or 1 cup chicken broth
Zest & juice of 1 lime
Dash of Pepper
Dash of Salt
*Additional optional ingredients: cocoa powder or a dark chocolate square, chopped green peppers, cinnamon, chipotle pepper powder, anything else you want.
1-10oz can Black Beans (Frijoles negros)
1-10oz can Red Beans (Habichuelas coloradas)
1 cup water or (or liquid broth if not using concentrated broth
We eat these beans at least 4 times a week; they are a staple at home and go well with dinner or breakfast (or anything). They are great with grilled meats and grilled corn on the cob.
I made this recipe up over a couple years and I never measure, so the amounts vary at times. You can add or subtract ingredients and amounts to your own taste. It is a little picante here.
I don’t know if this qualifies as a Spanish recipe, but it is delicious, so I thought I’d share. Enjoy!

DonPerígo, we can try RussHuntley's recipe with soy sausage instead of chorizo.
Here's one of my old standby recipes, Its quick and easy:
Black Bean Burrito Bake
Ingredients:
1 (7 oz.) can chipotle chiles in adobo sauce
1/2 cup reduced -fat sour cream
1 (15oz) can black beans, rinsed, drained
2 (8-inch) flour tortillas
cooking spray
1 cup bottled salsa
1/2 cup (2 ounces) shredded Monterey Jack cheese
Instructions:
1. Preheat oven to 350
2. Remove one chile from can. (or maybe just a small piece of chile if you don't like it too hot and spicy) Chop chile. Reserve remaining adobo sauce and chiles for another use. Combine sour cream and chile in a medium bowl; let stand 10 minutes.
3. Place beans in food processor with sour cream mixture and blend until creamy.
4. Spoon 1/2 of bean mixture down the center of each tortilla. Roll up tortillas; place, seam side down, in baking dish coated with cooking spray. Spread salsa over tortillas; sprinkle with cheese. Cover and bake at 350 degrees for 20 minutes or until thoroughly heated.
Yields 2 burritos
